Food from L.I.F.E.

Zucchini Fritters

(makes

6)

1 lb. zucchini (about 2 small)

1 tsp salt

1 egg

1/4 cup green onion or chives finely chopped

1/8 tsp pepper

3 Tbsp flour

1 Tbsp oil for frying Coarsely shred zucchini in a med. bowl. Add salt & toss to coat.

Let stand with occasional stirring for 10 min. Meanwhile, in another bowl beat egg, onion and pepper.

In a clean kitchen towel squeeze as much water out as possible from zucchini.

Combine zucchini with egg mixture, heat oil over med-high heat in a large skillet.

Dorp mixture in 6 mounds in skillet, flatten slightly with spatula.

Cook until golden brown on both sides with turning. .
