Apple Walnut Muffins
In a large bowl thoroughly mix together:
1 3/4 cups flour
1 cup packed light brown sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/2 tsp nutmeg
1 1/4 tsp cinnamon
1/6 tsp ground ginger Make a well in the mixture.
In a small bowl mix together:
1 egg, slightly beaten
1 cup sour cream
1/2 cup apple sauce
4 Tbsp salad oil Mix wet and dry ingredients just to wet all of the dry. Fold in 1/3 cup broken walnuts, 1 cup diced apple Spoon batter among 12 paper lined muffin cups.
Sprinkle with coarse sugar.
Bake in a preheated 350 degree oven for 25-30 minutes.
