Snap Beans with Mushrooms and Scallions
1 lb. Snap beans (green, wax or mixed) 4 Tbsp butter (1/2 stick) 1 cup scallions cut into 1/4' pieces including some green parts 8 oz. fresh mushrooms, sliced Cut the beans into about 1 1/2 inch pieces. Put them into boiling water until crisp-tender-about ten minutes. Drain.
Melt butter in a 10-inch skillet. Add the scallions. Cook with some stirring, until wilted on the low heat.
Add mushrooms and increase heat to moderate. Stir frequently until softened.
Add the beans and stir to heat to serving temperature. Add salt and pepper to taste.
This is one of my favorite green bean recipes.
