Tomato Salad Putanesca
1 pint cherry tomatoes, halved
1/2 can flat anchovy fillets, diced or to taste
2 Tbsp oil from anchovies
2 Tbsp fresh lemon juice of balsamic vinegar
1 Tbsp capers, optional, rinsed Combine all ingredients, refrigerate until served.
Kidney Bean Salad
Mix together:
4 - 4 1/2 Tbsp catsup mixed with 1/8 tsp garlic powder and 1 tsp Worcestershire sauce
1 Tbsp balsamic vinegar
1 Tbsp white vinegar
1/4 cup chopped green onion
1/3 medium green bell pepper, chopped
1/3 cup diced celery
2 Tbsp sugar
1/2 tsp paprika pinch salt
1/4 cup extra-virgin olive oil * Add one 15 oz. can of kidney beans drained and rinsed.
Toss well. Chill 6 hours or overnight. * Or other vegetable oil - Harold Schmalfeld
