Garlic Mashed Potatoes with Mushrooms & Scallions
3 med-large potatoes (approx. 1 lb.)
2 cloves garlic, minced 4 Tbsp butter, divided 1/2 bunch scallions, sliced 4 oz. mushrooms, sliced Milk to taste Cook pared potatoes in lightly salted boiling water. In a small microwaveable container briefly cook garlic with 2 Tbsp butter.
In 2 Tbsp butter with low heat, lightly saute the scallions. Increase the heat and add the mushrooms. Cook until mushrooms are browned and somewhat glazed.
Drain and dry potatoes, place into mixing bowl, add garlic with melted butter, mash or whip. Add and mix in mushrooms and scallions. Add and whip in milk to desired consistency.
