Beer & Cheddar Cornmeal Muffins
2 Tbsp butter
1 1/4 cups cornmeal
3/4 cup flour
1 Tbsp baking powder
1/2 tsp cayenne
1 small onion, minced
1 egg
1 cup beer
1 1/2 cups grated cheddar cheese
1 4-oz. can chopped green chiles Preheat oven to 400 degrees Melt butter and set aside In a large bowl, mix flour, cornmeal, baking powder, cayenne, sugar & onion, set aside In another bowl, slightly beat egg, add beer & butter, mix together Make a well in center of dry ingredients & pour in the beer mixture Stir to mix, do not overstir Fold in cheese & chiles Equally fill paper-lined or greased muffin cups Bake in a preheated oven 20-25 minutes or until a wooden tester comes out clean Remove immediately from cups and cool on a wire rack - Harold Schmalfeld
