Paradise Pumpkin Pie

Line a nine inch pie plate with pastry, set aside.

In a small bowl combine:

1 slightly beaten egg

8 oz. softened cream cheese

1/4 cup sugar

1/2 tsp vanilla Beat on low-med. speed until smooth. chill in fridge 30 minutes then spoon into prepared pie plate.

In a medium mixing bowl combine:

2 lightly beaten eggs

1 cup evaporated milk

1/4 cup sugar

1 1/4 cups canned pumpkin

1/4 cup packed brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ground cloves

1/4 tsp salt Carefully pour over the cream cheese mixture. Cover edge of pie with foil. Bake in preheated 350 degree oven for 25 minutes.

Remove foil from edge of pie. Continue baking another

25 minutes.

Meanwhile combine:

1/2 cup chopped pecans

2 Tbsp flour

2 Tbsp brown sugar, packed

1 Tbsp softened butter After the 50 minutes of baking, sprinkle the pecan mixture over the pie. Bake an additional 10-15 minutes until a knife inserted into the pie's center comes out clean.

Cool on wire rack 1-2 hours. Refrigerate. This glorified pumpkin pie is a treat.
