Tuna Melt with Horseradish Mayonnaise

(One Serving) Preheat oven to 475 degrees !. Make a sauce of :

2 Tbsp mayonnaise

1 Tbsp prepared horseradish

1 Tbsp whole grain mustard

2. To prepare the tuna stir together:

1/2 of 5oz. can of oil packed tuna, drained

2 Tbsp finely chopped celery

1 Small scallion, finely chopped or 2 Tbsp minced chives

1 Tbsp minced fresh parsley

1 tsp cider vinegar

1 Tbsp mayonnaise

3. Lightly toast a large slice of rye bread

4. Spread the toasted rye with the mayo/horseradish sauce

5. Mound tuna mixture on the toast and pat it into an even layer

6. Evenly cover the mixture with thinly sliced havarti or cheese of choice

7. Place onto a baking sheet and place onto a rack in the top 1/3 of the oven

8. Bake 5-7 minutes until the cheese melts Optional: Before baking place two tomato slices on the prepared sandwich, salt and pepper the slices and then cover them with more havarti.
