Red Onion Topped Potatoes
(6 servings)
3 large baking potatoes 1 cup grated Romano cheese 3/4 cup finely chopped red onion 1 Tbsp. freshly snipped cilantro or parsley 1 clove garlic, minced Preheat oven to 375 degrees Bake potatoes until tender ca. 1 hour Halve potatoes lengthwise. Score potatoes deeply crosswise, taking care not to cut through the skins. Sprinkle with salt and pepper.
Mix remaining ingredients and press into the scored potatoes.
Bake until hot ca. 5 minutes.
Experimental: Try with cheeses. These are attractive as well as being tasty.
